Crimini Grits

Grits are a versatile dish that can be enjoyed both savory and sweet in different varieties for breakfast, lunch or dinner.

3 tbsp. Butter, unsalted, unsalted

1 tbsp. Vegetable Oil

1 stem Thyme, fresh

1/2 cup White Onion, chopped brunoise (1/8" x 1/8")

3 cups Crimini Mushrooms, cleaned and thinly sliced

1 cup Quick Cooking Grits

3 cups Hot Water

1 tsp. Sea Salt, plus additional for seasoning

1/4 cup Half and Half

1 dash Black Pepper, freshly ground


Add the vegetable oil and 1 Tablespoon of butter to the 360 2-quart saucepan.  Place the pan over medium heat.  Melt the butter and carefully swirl the pan to mix with the oil.

Add the sprig of thyme to the butter/oil mixture.  Heat until the butter becomes foamy.

Add the onion.  Cook for 1-2 minutes until the onions become translucent. Add the mushrooms.  Stir and cook for 8-10 minutes.  The mushrooms will release their liquid and become soft.

Sprinkle the grits over the mushrooms then add three cups of hot water and 1 teaspoon of salt.  Cook the grits for 5 minutes, stirring occasionally.

Finish the grits with 1/4 cup of half and half and 2 Tablespoons of butter.  Season with salt and pepper to taste.
