Ham Steak with Pineapple-Brown Sugar Sauce

1 Bone-in or boneless ham steak, approximately one pound, 3/4 of an inch in thickness

2 Tablespoons of butter (divided in half)

2 Tablespoons of shallot, minced

3/4 cup pineapple bits (Fresh, chopped into small dice or canned pineapple tidbits in their

own juice)

3/4 cup ham stock or water

3/4 cup pineapple juice, unsweetened

1/4 cup of light brown sugar

1-teaspoon spicy brown mustard

1/4 teaspoon thyme leaves, fresh

Salt and pepper to taste



Pre-heat the 360 11.5” sauté pan over medium heat. The pan is ready when water

droplets dance over the surface of the pan.

Pat dry the ham steak then add it to the hot pan. No oil is necessary. Cook the ham over

medium heat for 5 minutes. Turn the ham steak with tongs and cook on the opposite

side for three to four minutes.

Remove the pan from the heat. Transfer the ham steak to a large plate or serving platter.

Cover the plate with aluminum foil to keep the meat warm.

Add 1 Tablespoon of butter to the pan. Swirl it around to coat the pan. Return the pan

to the heat. Add the shallots and chopped pineapple to the pan. Stir the ingredients with

a wooden spoon. Scrape up all the browned bits on the bottom of the pan. Cook over

medium heat for 5 minutes.

Add the stock, pineapple juice, light brown sugar, mustard, and thyme. Stir the

ingredients and allow the mixture to cook until the liquid is reduced by one-half,

8-10 minutes. Taste the sauce and adjust the seasonings with salt and pepper. Be careful

not to oversalt. The ham is already salty. Stir in the second Tablespoon of butter.

Portion the ham steak then top each portion with the sauce.
