Yogurt Cucumber Sauce
This sauce can be used as a dip for vegetables, pita chips or is the perfect topping for our *Mediterranean Spice Burgers.
2 Cups Greek Yogurt
1 Cup European Seedless Cucumber (Coarsely grated)
2 cloves of garlic (minced)
1/8 cup chopped fresh dill or cilantro
Juice of ½ lemon
1teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Mix together in a medium bowl the yogurt, cucumber, garlic, dill or cilantro, lemon juice, salt, and pepper.
Serve immediately or cover and refrigerate. Sauce is great for up to one week.
*Tip: This sauce is a great make ahead for any meal or gathering. Let it rest under refrigeration for an hour or even over night to develop deeper flavor.
