1 tablespoon chopped dried or fresh parsley leaves
Sauce
1/4 cup mayonnaise
1 garlic clove, minced
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Directions
Preheat oven to 425. Wash & dry potatoes and place on your 360 cookware jelly roll pan. Drizzle olive oil & seasoning all over and toss to coat evenly. Place in oven for 20 minutes or until they are softened enough to squish.
Remove your pan from the oven and with a mason jar or flat bottom glass press down on each potato until they are squished flat. Add additional olive oil on top it they look dry. Place back in oven and cook for an additional 30-45 minutes, turning half way through. The final result is a delicious crispy potato so cook until it reaches your crunchy level.
While potatoes are in the oven you can prepare the garlic aoili sauce to serve on the side. Mix together mayonnaise, minced garlic, lemon juice, salt & pepper. Place in fridge until ready to serve. Enjoy!
