I also got the large jellyroll pan, but it's to small to use like a cookie sheet. We thought about returning them, but it's just such a hassle to buy online and wait, then return, then have to look for the refund. Wish it was the size Lip we are accustomed to, or that they had something that was more the standard rise. . ."

- Hello, Thank you for reaching out to us. Our Large Cookie Sheet is made of three metals, with a .070 Gauge. The inside layer (which touches your food /baked on) is T-304 Surgical Grade Stainless Steel. The outside layer (what touches the heat) is also T-304 Surgical Grade Stainless Steel. These two layers of stainless-steel surround a layer of aluminum core, which ensures superior heat conduction. Your food doesn’t encounter this layer. Aluminum is used so you don’t have any hot spot or uneven baking.
