Salmon Tacos with Elote Salsa

Ingredients

  • Salmon Tacos with Elote Salsa

  • 1 tablespoon olive oil

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon paprika

  • 1/2 the juice of a lime

  • 2 tablespoons butter

  • 4 corn's cut off of the cob

  • 2 cloves garlic, minced

  • 1/4 cup diced red onion

  • 1 jalapeño pepper, cored and diced

  • 1/4 cup tablespoons mayo

  • juice of 1 lime

  • 1/4 cup crumbled cotija cheese or parmesan

  • 1 teaspoon chili powder

  • tortilla of choice

Directions

  1. Preheat oven to 375 degrees. Mix together olive oil, lime juice, chili powder, garlic powder, cumin & paprika. Add mixture ontop of salmon filets. Place on cooking sheet & bake for 20-25 minutes until filets are cooked to your liking.

  2. While salmon cooks make corn salsa. In a stove top skillet preheat butter until melted and add in garlic until fragrent. Add in corn, red onion and jalapenos and cook until slightly browned on the edges. Pour into bowl and mix with mayo, lime juice, cheese of choice, and chili powde

  3. Heat tortillas in the oven or over a gas stove top to get a slight burn on edges. Add in salmon & corn mixture. Serve with additional cheese sprinkles on top & lime wedge. Enjoy!
