Checking for Hot Spots

You may already know if your pan has hot spots by observing how evenly (or not!) foods cook across its surface. However, if you want definitive proof, there are a few different methods for determining this. Basically, you need to cover the surface of the pan with a substance and see if it heats up evenly. You can cut a round of parchment paper to fit in the bottom of the pan, or sprinkle an even layer of flour, and see if any areas turn brown before the rest of the pan.

Alternatively, mix up a syrup of 2 parts white sugar to one part water, and pour it into the pan, covering the surface. Set the heat to medium-low and watch without stirring as the sugar caramelizes. If some spots caramelize first, those are hot spots.

The Warping (wobble) Test:

A warped pan has a base that is no longer flat. If it wobbles on the burner or doesn’t sit evenly, it won’t heat properly and can lead to uneven cooking. 

  • Place your pan on a completely flat surface, like your counter a glass-top stove.

  • Press down on the edges of the pan at different points (12, 3, 6, and 9 o'clock).

  • The Result: If the pan tips or wobbles significantly, the bottom is no longer flat. If it spins easily like a top when you nudge the handle, it has developed a "convex" warp (the bottom is bulging outward).

The Sight & Smell Test:

Finally, try heating your empty pan over an element, and see if you can detect any metallic or chemical odors. A good quality pan will not smell.
