Ingredients

  • 1 pound of fresh broccoli (or 10 ounces of frozen broccoli)

  • 1 cup of cubed chicken (rotisserie chicken works great for this)

  • 1 can of cream of chicken soup or cream of broccoli soup

  • ⅓ cup of milk

  • 1 small yellow onion, diced

  • ½ cup of sharp cheddar cheese

Directions

  1. Preheat the oven to 375 degrees fahrenheit

  2. If using fresh broccoli, blanch the broccoli, cool, and drain

  3. In your 9” round pan or casserole dish, place the broccoli and cubed chicken

  4. Dice the onion, and saute it in the saucepan. Add the cream of chicken or broccoli soup and ⅓ cup of milk and stir.

  5. Add half of the cheddar cheese to the soup mixture and stir. Pour the soup mixture over the broccoli and chicken. Top with the remaining cheese.

  6. Bake uncovered for 30 minutes or until hot and bubbly.

  7. We like to enjoy this dish with rice!
