Ingredients

  • 1 pound of shrimp

  • 1-2 large zucchini, spiraled into “noodles”

  • Olive oil

  • 4 cloves of garlic, minced

  • ¼ teaspoon of red pepper flakes

  • ½ cup of heavy cream

  • ¼ cup of white wine

  • ⅓ cup of freshly grated parmesan cheese

  • Juice of ¼ of a lemon

  • Salt and pepper to taste

  • Parsley for garnish, if desired

Directions

  1. Marinate your shrimp in olive oil, two cloves of minced garlic, salt, pepper, and red pepper flakes for 10-20 minutes

  2. While your shrimp marinates, spiralize your zucchini into “noodles”

  3. Preheat your stainless steel fry pan, and once it’s ready, add a little olive oil to the pan

  4. Place the shrimp in the pan for 1-2 minutes per side, and remove from the pan

  5. Add the remaining two cloves of garlic to the pan and saute for 1-2 minutes

  6. Deglaze the pan with ¼ cup of white wine.

  7. Add the heavy cream to the pan and stir.

  8. Add the zucchini noodles and parmesan and cook for 3 minutes

  9. Add the shrimp back to the pan and top with a squeeze of lemon, fresh parsley (if desired) additional parmesan cheese, and black pepper.
