1 tablespoon butter
3 cloves garlic, minces
2 cups fresh spinach
7 oz jar of sun-dried tomato in olive oil
20 oz tortellini
1/4 tsp red pepper flakes
1 teaspoon Italian seasoning
sea salt & black pepper to taste
2-4 tablespoons all-purpose flour
1 cup heavy cream
1/2 cup parmesan cheese, grated
4 cups vegetable broth
Bring a large pan to medium heat. Add in butter and let melt. Add in garlic and cook until fragrant. Mix in an entire jar of sun-dried tomatoes & it’s olive oil. Add in red pepper flakes, Italian seasoning, flour and salt and pepper. Stirring until it comes together. Start with 2 tbsp and add additional if needed to absorb oils.
Pour in vegetable broth. Let come to a boil while continuing to stir. Add in tortellini and let broth cook pasta and become a sauce like consistency. Pour in heavy cream, parmesan and spinach. Stir after each addition.
Continue to cook until liquid becomes a delicious sauce. Serve in bowls or plates and sprinkle with additional parmesan cheese. Enjoy!
