Elote Pasta Salad

1 lb of pasta
1 cup of corn (fresh or canned)
1 jalapeno, diced
3 green onions, diced
1 red bell pepper, diced
½ cup of chopped cilantro
1 cup of crumbled Cojita cheese
½ cup of sour cream
½ cup of mayonnaise
1 teaspoon of paprika
1 teaspoon of chili powder
1 teaspoon of garlic powder
Juice of one lime
Salt and pepper to taste
Tajin for garnish, if desired
Cook the pasta according to package instructions and set aside to cool.
Make the dressing by combining the sour cream, mayonnaise, paprika, chili powder, garlic powder, and lime juice.
Add the pasta, corn, jalapeno, red bell pepper, green onions, cilantro, and cojita cheese and mix.
Add in the dressing and stir to combine.
Top with additional Cojita cheese and tajin, as desired.
