French Onion Broccoli Casserole
French Onion Broccoli Casserole
Products used: 3.5 Quart Saute Pan with Cover; 2 Quart Saucier

Ingredients
- 2 heads of broccoli, cut into pieces
- 3 medium yellow onions, sliced
- 1 clove of garlic
- 2 tablespoons of butter
- 2 tablespoons of flour
- 1 cup of beef broth
- 1 cup of milk
- 2 cups of shredded cheese, like cheddar and gruyere
- 1 cup of french fried onions
- ½ cup of panko breadcrumbs, if desired
- Olive oil
- Salt and black pepper to taste
Directions
- Add your broccoli florets to your 3.5 quart saute pan with cover and add water to rinse. Using the cover, drain the excess water from the pan.
- Place the pan on the stove on medium heat. Once steam starts escaping from the pan, twist the lid to form a vapor seal, reduce the heat to low, and cook covered for about 5 minutes, then remove the broccoli from the pan and set it aside.
- In the same saute pan, add butter or oil, and bring it to medium low heat, then add your sliced onions with some salt. Slowly caramelize the onions for about 20 minutes, using a little bit of water to deglaze the pan as necessary.
- While the onions are caramelizing, make the cheese sauce, by adding 2 tablespoons of butter and 2 tablespoons of flour to your saucier to make a roux. Add one cup of beef broth and one cup of milk to the roux and simmer for a few minutes until thickened. Turn off the heat, and add the cheese, stirring it all together until melted. Season with black pepper as desired.
- Once the onions are caramelized, add a minced clove of garlic to the pan and saute for one minute.
- Add the broccoli back to the saute pan, and top with the cheese sauce. Mix the broccoli, onions, and cheese sauce together, then top with a sprinkle of panko bread crumbs, additional shredded cheese, and the french fried onions.
- Bake at 375 degrees for about 20 minutes or until the fried onions are a golden brown color.
