French Onion Pot Roast

Ingredients

3-4 pound chuck roast
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried oregano
1 teaspoon of oregano
1 teaspoon smoked paprika
Salt and pepper to taste

4 tablespoons of butter
5 large sweet onions
2 tablespoons of flour
Salt and pepper to taste

1 cup of red wine
2 cups of beef broth
2 tablespoons of worchestershire sauce
2 tablespoons of dijon mustard
1 tablespoon of soy sauce
2-3 bay leaves
2-3 springs of fresh thyme
2-3 springs of fresh rosemary
Salt and pepper to taste
Gruyere cheese, bread, and fresh parsley for topping (if desired)
Directions
Season the chuck roast with garlic powder, onion powder, paprika, oregano, salt, and pepper.
Sear the chuck roast in your stainless steel slow cooker pot on the stove for 5-7 minutes per side, and then remove from the pot.
Add in butter, and then your 5 sliced onions. Carmelize your onions for 20-25 minutes.
Add flour to your onions, followed by red wine, beef broth, worchestershire sauce, dijon mustard, soy sauce, and your herbs (bay leaves, thyme, and rosemary).
Add your chuck roast back to the pot and place it on the slow cooker base and cook on medium heat for 4 hours or when it shreds easily with a fork.
After shredding the beef, add it back to the slow cooker base. Top with slices of baguette and gruyere cheese. Place the slow cooker pot in the oven to melt the cheese on the toasts using your broiler. Serve with fresh parsley if desired.
