One Pot French Onion Mac & Cheese

Ingredients

  • 2 tablespoons of butter

  • 1 yellow onion, diced

  • 1 tablespoon of minced garlic

  • 2 cups of ditalini pasta or elbow macaroni

  • 3 cups of beef broth

  • ½ cup of heavy cream

  • 1 teaspoon of black pepper

  • 4 ounces of gruyere cheese, shredded

  • 8 ounces of cheddar cheese, shredded

  • Chopped chives for garnish

Directions

  1. Preheat your saute pan on medium low heat for 3-5 minutes.

  2. Once your pan is preheated, add one tablespoon of butter, and caramelize your onions for about 15 minutes, or until golden brown. Use a little water to deglaze the pan as needed.

  3. Once the onions are brown and softened, add the other tablespoon of butter to the pan along with your minced garlic. Stir to combine.

  4. Add the pasta and beef broth to the pan, bring to a simmer, and cover. Cook for roughly 10-11 minutes or until the pasta is cooked.

  5. Add in the heavy cream and black pepper, and stir. Reduce the heat slightly, and add in the shredded gruyere and cheddar cheese. Mix well.

  6. Top with chopped chives for garnish and serve.
