Roasted Broccoli with Greek Yogurt Caesar Dressing

Products used: Stainless Steel Jelly Roll Pan
1 pound of broccoli
1 tablespoon of avocado oil
½ cup of greek yogurt
1 tablespoon of fresh lemon juice
½ teaspoon of anchovy paste
½ teaspoon of dijon mustard
½ teaspoon of worcestershire sauce
2 cloves of garlic, minced
¼ cup of shredded parmesan cheese for the dressing + ½ cup for topping
Salt and pepper to taste
Preheat the oven to 425 degrees fahrenheit. Place the avocado oil on your stainless steel jelly roll pan, add the broccoli, and season with salt and pepper. Roast for about 20 minutes, flipping halfway through. After 20 minutes, top with shredded parmesan cheese and roast again for another 5-10 minutes.
For the caesar dressing, combine the greek yogurt, lemon juice, anchovy paste, dijon mustard, worcestershire sauce, minced garlic, ¼ cup of parmesan cheese, and salt and pepper to taste. Set in the fridge while the broccoli cooks.
Once the broccoli is cooked, and the parmesan has melted, remove the broccoli from the oven and top with the caesar dressing and additional parmesan cheese if desired. Season with additional salt and pepper if desired.
