Pat the NY strip steak dry and season generously with salt
Heat a stainless steel pan over medium low heat for a few minutes
Sear the steak for about 2-3 minutes per side, depending on thickness, until a deep crust forms.
Add butter and a smashed garlic clove to the pan, then tilt the pan and baste the steak continuously for 1–2 minutes.
Remove the steak from the pan and let it rest for at least 5–10 minutes before slicing
In a small bowl, make the dressing by mixing Greek yogurt, mayonnaise, lemon juice, crumbled blue cheese, minced garlic, salt, and black pepper until smooth and creamy
In a large bowl, combine chopped romaine, cherry tomatoes, red onion, and walnuts.
Toss the salad with the dressing until evenly coated
Slice the rested steak against the grain and serve over the chopped salad
