Yogurt Cucumber Sauce

2 cups greek yogurt
1 cup European seedless cucumber ( coarsely grated and drained)
2 garlic cloves, minced
2 tbsp fresh dill or cilantro, chopped
juice from 1/2 lemon
1 tsp kosher salt
1/4 tsp black pepper, freshly ground
Mix together in a medium bowl the yogurt, cucumber, garlic, dill or cilantro, lemon juice, salt and pepper.
Serve immediately or cover and refrigerate. Use within one week.
