Prep veggies by cutting into bit sizes and placing in bowl to combined. Once it's all cut and ready add olive oil and seasoning and toss to fully coat.
Take out pan with chorizo and remove chorizo. Layer veggie mixture into pan and place chorizo ontop.
Return to oven and continue to bake for another 30-45 minutes or until fork easily pokes into potatoes
Slice chorizo and plate with veggies and spicy Mayo (you can omit if you don't prefer sauce)
